A dish made by seasoning meat with gochujang or red pepper powder and stir-frying it.
It’s as popular and common as they come, so there are many different flavors and cooking methods, but the method I’ll be using today is the dry style.
For reference, using roughly just red pepper powder makes it dry, while using gochujang makes it wet.
First, put the meat into a heated pan.
Don’t give the meat a smoky flavor from the start; just loosen it up and cook it over moderate heat.
The smell of meat wafted up. It would be tasty even if I just sprinkled it generously with salt and pepper and ate it.
I continued cooking while clutching my growling stomach.
Once the meat had taken on some color, I added the prepared onion, green onion, and carrot.
“Mr. Carrot. You’re only here today.”
Carrots are a vegetable for color, so it’s fine to leave them out if you don’t have any.
The important thing when making dry jeyuk is the initial seasoning.
Since I don’t use gochujang and use red pepper powder only for color, the other flavors need to be completed in advance.
I seasoned it with our mutual friend, the green seasoning.
After stir-frying it for a while, if it seemed too dry, I added soy sauce mixed with sugar and garlic little by little as I stir-fried.
As the soy sauce heated, a delicious aroma rose.
As a little tip, you can add a touch of rice syrup or corn syrup, too. That gives the meat a glossy sheen.
As I kept stir-frying, moisture emerged from the vegetables and created liquid, but I didn’t worry—I added plenty of red pepper powder.
The red pepper powder absorbed all the moisture, producing the jeyuk we’re familiar with.
The cooking was essentially finished, so before the vegetables lost their crispness, I quickly gave it a smoky flavor.
As if I were imparting it to the red pepper powder, not the meat.
It’s difficult to impart that smoky flavor with a home cooktop’s heat, which is where the difference between homemade food and restaurant food comes from.
After a few tosses of the wok, the liquid vanished and the jeyuk was complete, looking quite appetizing.
Finally, a touch of sesame oil.
“Mmm. It’s incredible as always.”
I always feel this way, but jeyuk is never wrong.
